I have had Madonna Inn's cake and while there, I spoke to one of the bakers and he said that they chill the pink chocolate into a block (pour into a loaf pan), remove from pan and shave off pieces using a vegetable peeler, creating small, thinner pieces than you've used here.. the longer ones on top are created when the chocolate has been out a bit longer and the curls come off the block a bit bigger.
